My orange one and I sadly don’t have the same need to feed. As a result I’ve realised that my clothes have become….um a bit tight lately.
This is until recently when I started to go back to my singleton eating habits of eating salads, soups or vegetables for dinner.
This easy celery soup is one of the delicious recipes I make and can’t get enough of. Maybe you like it too?
Bunch of Celery rinsed and chopped include the leaves
1 Onion chopped
1 Clove of Garlic chopped
3 Carrots peeled and chopped
A bunch of parsley just bigger than your fist – rinsed and chopped
1L Vegetable or Chicken Stock
¼ Teaspoon nutmeg
Squirt of Lemon Juice
1 Bay Leaf
Here’s what you do:
- On low heat sweat the celery, onion and garlic until they are slightly translucent about 10 mins – don’t fry that it becomes brown. While this is going on, place the carrots in a bit of water in the microwave on high for 6 minutes until soft.
- Add the rest of the ingredients and boil for 20 – 30 minutes
- Remove the bay leaf and zuush with a stick blender until fine
Enjoy as much as you want because there is barely any calories in there!
