Between work, gym, dogs, projects, life and a messy house, the last thing I want to do is slave in front of the stove when I come home from a long day.
I’ve been craving a tomato-y chicken dish for weeks and last night I decided this was it! I have to see what I have in the cupboard to make it happen!
It came out marvellously, even if I do say so myself, and the best… Prep is less than 10 mins!
The boring stuff:
Makes enough for 4 – 6 people
Preparation time: 10 mins
Cooking time 60 mins (we put it in the oven on low heat and went to gym)
What you need:
500 – 800g chicken pieces (or breasts chopped)
1 tin of good quality tomato pureé
1 onion finely chopped
5 sprigs of fresh thyme (or whatever other green Italian herb you have)
2 – 3 cloves of crushed garlic
Chicken Spice / salt and pepper
1. Oven on 180⁰ C
2. Season the chicken with the chicken spice and brown in the pan, place in a casserole dish
3. Fry the onion, garlic and thyme until brown and translucent
4. Place the onion mixture on top of the chicken and cover with the tin of tomato pureé
5. Place the lid on the dish and put in the oven for 60 mins
And Viola! Divine Tomato-y Chicken
